Gauchonfire is a full-service culinary and event production company built around fire, atmosphere, and experience. What we create goes far beyond food. Each event is designed as a complete environment — where the energy, the flow, the design, and the people all come together in a way that feels effortless, but is deeply intentional. From private dinners to brand activations and large-scale productions, we take care of every layer of the experience — from culinary concept and execution to full event production, team management, spatial design, and curated bar programs.

Executive Chef & Culinary Director

Gabriel Pazos

Gabriel Pazos is the creative force behind Gauchonfire’s culinary identity. Born in Uruguay, his connection to fire cooking comes from tradition — from long tables, open flames, and a way of gathering that feels both raw and deeply intentional.

Over the years, his work has evolved into something that goes beyond cooking. Gabriel designs culinary experiences that respond to the space, the people, and the moment. His experience
includes leading consulting projects for hospitality concepts such as Heartland Miami and Hotel de las Montañas in Colombia, where he has developed menus, structured kitchens, and trained teams to execute with consistency and precision. He currently serves as Executive Chef at Shelter Woodstock, where his approach to fire cooking meets a more refined hospitality setting. Gabriel has also been part of international culinary festivals, including Festival de los Hongos in Mexico and El Papá de los Asados in Colombia. His cooking is instinctive, grounded in origin, and always evolving.

Paula Diaz

Paula Diaz leads the production, design, and overall vision behind every Gauchonfire experience. With over 15 years in hospitality and event production, her strength lies in bringing ideas to life — not just as events, but as fully realized environments. She oversees everything from team coordination and logistics to spatial design, table styling, and the overall flow of the experience. Her approach is both operational and creative. She understands how an event needs to function, but more importantly, how it needs to feel. Paula works closely with private clients and brands to design experiences that are thoughtful, elevated,
and cohesive — where every detail, from the placement of a plate to the rhythm of the night, is intentional. For her, the goal is simple: to create experiences that feel effortless, but are unforgettable.
